The workshop title says it all…This course is a blast! You’ll discover that chocolate-making is both easy and a lot of fun.  Our instructor, Malcolm Saunders, Founder and Owner of The Light Cellar in Calgary, is so enthusiastic and interesting. The class will explore the history of chocolate, how chocolate is made, and what forms it can be found in. The ingredients Malcolm shares are natural and healthy… as healthy gets when we’re playing with chocolate.

About Paul Martzoukos

Hi, I'm Paul, the President and Founder of Tannin Fine Wines and Vinestones in Cochrane. Food and wine are in my blood. I started working in the family restaurant at nine years old, and it has been my passion ever since. I went to the University of Guelph, graduated from their Hotel and Food Administration program (B. Comm), and put myself through the program by working in various fine dining restaurants. After graduation, the lure of mountains and skiing took me to Alberta, and after a short while decided to stay and immerse myself into wine in the newly liquor-privatized Province. That was 1995, and I worked my way up through several prominent Wine Importers until I was running a National agency.  Along the way, I became a Certified Sommelier and Sommelier Instructor. In 2005 I took the opportunity to start my own agency, Tannin Fine Wines, and pursue my true passion, which is to work with small innovative producers and connect them with the top wine-focused restaurants and retailers in Canada. We also took the opportunity to build a fantastic wine store in our hometown of Cochrane, Vinestone Wine Co. Part of this passion is teaching people about Food and Wine and how magical they can be.  I continue to do regular tastings for small and large groups and love sharing the stories of people and places that have inspired me.
