Traditional Cheese Making at Home

The One that started it all!

with Dawn Kay

Learn from the cheese-magician herself! If you have ever tried her creations, you know what we're talking about.
Join Dawn
for a fun and educational experience where you'll come to understand the cheesemaking process by creating your own fresh cream cheese and squeaky cheddar curds.

June 15th, at Early Dawn Farm

12 - 4 PM

$110 per participant

Class size is limited to 8 maximum, and will be filled on a first-come basis.

Registration will be complete once payment is received by e-transfer to dawn@earlydawn.farm

You will learn the cheesemaking steps from the introduction of bacterial culture, right through to adding coagulants to create curds and whey. We will talk about food safety, the equipment needed to make cheese at home, and how you can find books and online references to continue on your cheesemaking journey.

You will take home a portion of the fresh chevre (goat cream cheese) and salted, ready-to-eat cheddar curds as well as a worksheet on the cheesemaking steps and both recipes we used in class.

Cheese takes several hours to make, so there will be time for tea and coffee, cheese sampling, and if you would like, a visit to see the goats! Your fresh chevre will be in a reusable cheese mould to be babysat overnight.  This will give you a professional cheese form to be used again many times at home.
